Hiya...it's been a while since I have visited the forum, wow great to see new people and recipes...
Here is a smoking hot recipe. I use maryland chicken and take off extra fat and skin. Just taste and adjust the sauce before applying it to the chicken.
Recipe makes about 2 cups of marinade. Blend all of the following
ingredients, leftover sauce can be stored in fridge for a month.
1 medion onion
1 cup spring onions
6 cloves of garlic
2 tsp fresh thyme
2 1/2 tsp allspice
2 tsp salt
1 1/2 tbs sugar (for low carbing use splenda)
1 tsp nutmeg
1 cinnamon
1 tsp cayenne pepper
1 tbs white wine vinegar
fresh black pepper
fresh chilli
about 100-150ml olive oil
juice of 1 lime
100 - 150 ml soy sauce
dash of tabasco sauce
Rub marinade into chicken, refridgerate for 24hours.
The trick to good jerk chicken is in how you cook it, the tradition method takes ages, slow cooking, constantly turning and basing the meat with extra marinade. When I'm in a rush I just bake in oven for 30-40mins then onto a gas BBQ to get the smoking flavour, and it heaps if your hair smells of smoke too! its all about smell and atmosphere :-)
