Harper's Biochemistry, a textbook for medical students, as well as other published scientific sources say:

1. Triglycerides (fat) absorbed in the digestive system are generally NOT intercepted by the liver and therefore spare (protect) the liver, unlike carbohydrates and proteins, which have to be metabolised. Yet ..we are constantly told that fats are overloading the liver. The so-called "fatty liver" develops exclusively from the over-consumption of glucose or alcohol.

2. We are constantly told that dietary fats are deposited in our arteries causing arteriosclerosis. Yet ...it is fatty acids produced by the liver and blood vessel walls from carbohydrates, which are responsible for this process.

3. It is commonly accepted that a low-fat diet, rich in fruits and vegetables, reduces the blood serum cholesterol level. The truth is very different. Excessive consumption of sugars (carbohydrates) increases production of fatty acids and cholesterol, while consumption of dietary fat slows down production of fat and cholesterol by the liver.

4. Fruits (containing large amounts of sugar - fructose) are considered a healthy type of food. Biochemistry textbooks uniformly state that fructose "floods" the metabolic pathways in the liver, causing overproduction of triglycerides (fats causing obesity) and cholesterol. Fructose is also converted to glucose, which stimulates secretion of insulin. Over-secretion of insulin may eventually lead to diabetes.

5. Large amounts of carbohydrates stimulate insulin production, which increases production of fats and inhibits their cellular uptake. That means that fats from our tissues cannot be broken down and utilised for energy, hence - obesity. Yet, officially, we still apparently do not know the cause of current epidemic of obesity.

6. Excessive amounts of proteins are converted in the liver into glucose in the process of gluconeogenesis. Yet typical recommended "diabetes diets" contain far too much carbohydrate (up to 70% of energy requirements) and no special attention is paid to the amount of proteins. At the same time we are told that excessive amounts of saturated fats are causing diabetes.

7. Soy and legumes are widely recommended as sources of proteins, while it is a well-known fact that proteins from these plant materials are of a very low quality (biologically). The most valuable proteins come from animal products, especially from egg yolk.

8. Low-calorie diets are recommended in weight-loss programs by many medical practitioners. Yet ...this type of diet leads to a significant weakening of the immune system and other pathological changes, e.g. chronic fatigue syndrome.

9. Any dietitian knows that the energy derived from one gram of fat is approx TWO times greater than that obtained from one gram of carbohydrate or protein. However not many know that calories from fat and carbohydrates are utilised differently by the body. That is why one can consume less calories and put on weight and vice versa - ingest more calories and lose weight, provided they come mostly from fat.

10. Biochemistry tells us that vitamins such as A, D, K, and E are fat-soluble and that a low-fat diet will eventually deprive the body of these essential nutrients. How then, can doctors as well as dietitians recommend low (sometimes, very low) fat diets.

11. The best way to loose weight in a healthy, controlled and a pleasant way is to make the body "burn" fat by providing it with this source of energy, exclusively. Yet obese people are constantly told to consume high-carbohydrate food with obvious disastrous effects.

12. Biochemistry has long established that on average, the human body needs approx. 35 to 55 g of proteins per day and that excessive consumption of proteins may cause serious metabolic problems. Yet ...some doctors and dietitians recommend high protein diets, without regard for the amount of proteins consumed by a patient.

13. Recent research indicates that glucose is responsible for Beta cells apoptosis (death by design) which eventually leads to insulin-dependent diabetes. Yet carbohydrates (source of glucose) are daily almost "pumped" into children. At the same time more unnecessary "research" is conducted and more drugs produced to "treat" diabetics. And again we are told: the cause of diabetes epidemic is not known!

14. Physiology of digestive processes dictates that the amount of absorbed fat (unlike carbohydrates and proteins) is naturally LIMITED! In another words - it is impossible to absorb more fat than the intestinal transport mechanisms would allow. So if you force yourself to consume too much fat the body will eliminate the excess by vomiting or diarrhea. Yet one can easily eat kilograms of carbohydrates or proteins. Even though it is well established that fats that make us fat are synthesized from excessive amounts of CARBOHYDRATES, the food industry is pushing mountains of carbohydrates with the blissful blessing of many doctors and dietitians.

15. Biochemistry textbooks clearly state that polyunsaturated fats create free radicals, which destroy cells, causing cancers and premature ageing. Yet we are inundated with recommendations to consume more polyunsaturated fats.

16. The human digestive system does not produce enzymes, which are necessary for digestion of fiber (cellulose) like do digestive systems of herbivores (grass-eaters). Yet we constantly hear recommendations to eat as much "grass" as possible i.e. vegetable, bran etc., despite the latest research indicating that excessive consumption of fiber does not prevent, but may lead to, the colon cancer.

And, there is more ..., much more!
From the above-presented material it is easy to see that the current "pyramid of healthy foods" is unsuitable for human needs. Optimal Nutrition EXACTLY fulfils the nutritional requirements of the human body, as established by science. No more, no less.

Hopefully you can now appreciate why medical practitioners in Poland who recommend the Optimal Nutrition have been experiencing incredible cures of many allegedly incurable diseases.
