View Full Version : Healthy wholesome barley soup

Another one for
Healthy, Organic or Wholefood Recipes

cooking oil spray
1 leek thinly sliced
2 garlic cloves crushed
300g carrots sliced
3 sticks celery sliced
400g potatoes cut into 2cm cubes
250g pumpkin cut into 2cm cubes
1.5 l vegetable stock made with cubes
2 x 400g cans diced tomatoes
2 tblesp soy sauce
2 dried bay leaves
1/2 cup barley
1/2 cup c hopped parsley

cook leek and garlic with cooking spray med heat until golden
add everything else except parsley bring to boil

reduce heat to medium and simmer for 45 mins or until barley is tender
remove leaves and stir in parsley
season with salt and pepper

Well I was thinking it was seasonal but have been told since its year round :confused:

But I have seen it around alot now, we had some last night!

nah it has to be seasonal as we hardly ever see it - asked fruiter ad he said a winter vegetable....
It is really nice mashed instead of potato!!!

Is barley ok on a low carb diet? I was thinking of using it in place of rice?

Barkley is ok in a low carb diet. They do have a high carb count but a lower "net carb" or "digestible carb" content. This means there is a lot of dietary fiber and not so much of the 'bad stuff'.

Celeriac is a winter vegetable and is in season from around September till November. It should be great instead of potatoes, I agree. I'll try that out and see how my student colleagues like it. They don't eat as healthy and are always surprised how good healthy food is. I always tell them that a healthy diet helps (http://www-scf.usc.edu/~dmwagner/stress-levels.html) when you’re stressed out.

... on the topic of barley... i had planned to make mushroom risotto today and noticed i was lacking rice as well as couscous... replaced it with barley, which was... interesting to say the least. i'd say if you like porridge, you'll like barley risotto :D

I'd have severe concerns about the carb count of this recipe - see below for some selected ingredients - as just for these it is already 127 grams. How many serves does it make? I'd be worried about all those carbs giving me cravings again.

2 x 400g cans diced tomatoes 34.4
1/2 cup barley 19.2

And the 1.5 l vegetable stock made with cubes is a concern too, cubes are not good (IMHO) due to all the additives they put in them.

I don't remember making the post but rest assured, I wouldn't add the potato (ever) I probably used other things like some cauli, maybe some kohl rabi, for the life of me I cant remember

I love barley so I got excited when I saw this post. But I thought when I read the ingredients that it didn't look very LC. Barley on it's own isn't too bad though - I've used it before by adding it to beef soup, so that's probably one I'll do again when it gets cooler.

I refuse to use stock cubes or store bought stock for same reason but in regards to carb, we must remember it isn't posted in the low carb recipe section :)
