Low carb meals?

I always keep a low carb protein bar in my handbag for those desperate times, they are filling and yummy if you have nothing else. I like to take boiled eggs with me in a cool bag if im going out. bit stinky if youll be eating them around others, but ok if youll be on your own. Sometimes i take a serving of Atkins protein shake in a shaker. If and when i want it i can just tip some of my water from the water bottle i always have with me in with the powder and you have a protein shake. Filling and low carb. If you are able to take a salad. Or a little tin of tuna could be handy. Celery sticks and cucumber slices kept cold are good. I also like to make a frittata, you can freeze it in slices and take a slice with you and eat it cold.
Hope some of these ideas have helped
Lauren :)

Deb, I usually put a couple of teaspoons of LSA mix (not sure if everyone here approves of it) into my Atkins strawberry shake along with two or three strawberries. It makes the shake really thick. I normally make it in the morning as I head out of the door and put in a couple of ice cubes to keep it cold. When you are ready to drink it, just stir and Bob's your uncle!
Another thing I make, and this recipe is from this forum, is a modified version of the Quick Almond Bread - I substitute two teaspoons of the almond meal with LSA mix or plain flaxseed meal. Hope this helps.

Deb, LSA is a mix of finely ground linseed (flaxseed), sunflower seeds, and almonds. I haven't seen it in supermarkets but any healthfood shop will have it. I tend to buy the biggest size available as I go through it quite quickly.

Deb, I was just at my local Coles and they sell LSA meal - 500g for $7.40.

If you can it is best to grind it fresh yourself as the flax will degrade quickly (the omega 3 oils will go rancid) especially if it is just sitting in one of those bins. They are just equal portions so easy to do yourself with a grinder that's able to grind the flax seeds.

That's a great idea, I hadn't even thought of grinding it myself. I buy the Lotus brand which is kept in the fridge so hopefully it won't go rancid too soon but I might get a spice/coffee grinder and do it myself. Thanks, Sherrie.

I have just found the Empower Fibre X cereal at a health food shop. Its $13.00 or so but you can have it as cereal with 2g carbs. I made muffins with them, recipe on pack, which i made and froze them individually. When i am heading out or need a quick snack, i get one out, 30 secs in the microwave and a bit of butter, nice.

Lauren, did they taste okay? I have used Empower Chocolate Muffin Miix to make a cake for Mark's b/day. It was a bit dense but not bad as cakes go.

We have plenty of cake recipes, next time you want to make a chocolate cake try the chocolate and hazelnut cake (http://www.apinchofhealth.com/forum/vbb/showthread.php?t=5660)

I found the same Flyod. You get sick of the taste of the Fibre X and its the same thing the Empower Chocolate Muffin mix is made from. I have a cupboard full of the stuff!! I use it when I make hamburgers though, just a little and they come out nice and moist.
