    Ozgal's choc POH muffins

    Hello,

    Have to share this recipe with you all:

    Ozgal's Choc POH Muffins (I took a few suggestions I'd read on board and incorporated them into my variation below, i.e. the egg whites - and choc squares - great ideas).

    1 metric (250ml) cup of muffin mix
    14g Cadbury bourneville cocoa (I weigh mine, but it's approx 2 tbs)
    Cadbury lite chocolate (6 squares)
    2tbs Cottee's diet chocolate topping
    2 whole eggs (60g size)
    Plus extra 2 egg whites (stiffly beaten)
    3 tsp baking powder
    50ml of Bulla Lite cream
    100ml water
    Splenda - 24 tablets crushed (I use a large meal mallet to crush mine)


    Beat egg whites until stiff in small bowl. Set aside.

    Crush Splenda tabs and mix with dry ingredients in a large bowl (except the Cadbury Lite choc squares).

    Mix all other wet ingredients.

    Mix wet into dry ingredients. Gently fold beaten egg whites into the mix.

    Spoon into muffin or friand tray (I use friand tray as the shape looks more exotic to me than regular muffins). Push 1 choc square into each muffin....make it disappear otherwise it looks a bit cheapo sitting on top with Cadbury's written on it (mine did not lose shape...so next time I will be pushing mine into mix until I cannot see the choc anymore).

    Cook on 160oC for 25 minutes. Leave in tray to cool. Use a dessertspoon to gently lift out of tray onto wire rack until completely cold.

    There are lovely and moist, rise well and stay tall and are very yummy.

    Nutrition per muffin:

    Protein - 9.37g
    Fat - 9.39g
    Carb - 3.74g
    Fibre - 8.09
    Cals - 141.63

    I could also see these being a great dessert idea, warmed in microwave, topped with fresh raspberries and drizzled with choc sauce (maybe made with cream, Cadbury lite choc and Splenda??)...Will have to give this a try!

    I have never made a choc sauce so if anyone has a recipe that would be great!

    I often melt some low carb choc in the microwave and mix in a good dob of thick cream, mix well and use as a dipping sauce. Yumm!!
    P.S your muffins sound pretty good.

    Try dipping strawberries in it, feels almost sinful

    I don't make a lot at a time, usually just one square of Darryl Lea zero carb or three squares of cadbury lite.

    I have on occasions spread it on a muffin and then left it in the fridge for the chokky to reset a bit, makes a yummy icing.

    Yum.

    Moonstruck, what's your opinion between the Darryll Lea and the Cadbury Lite. I have not tried Darrell Lea yet. I find the Cadbury Lite very good - pretty close to regular chocolate, but I have noted the comment here and there "once you get used to the taste" applied to the Darrell Lea.

    So, what do you think of it?

    I tried the darryl lea zero carb before the cadbury's and quite liked it. I like to have it straight from the freezer so it is really hard.
    I only ever have one square at a time (one serve) as it seems to cause more "eruptions" than the cadbury's, and yes the cadbury's tastes the closest to real chokkie. Three little squares of that is the serve size.
    I used to always have one or the other on the go, but try not to eat it too often these day's as I think too much can cause a stall with weight loss. It is more of an occasional treat now.

    Great to be able to have choc though, isn't it. Today I am sufferng from over consumption of sugar free lollies....boy am I paying big time. My tummy is swollen up like a watermelon and I've already spent considerable time in the loo.

    That will teach me, but then I am a person who needs to experience it
