Low carb pastry?

My man thought he was doing the nicest thing and went out and bought me a pie maker... so what does a low carber do with a pie maker I ask you? Well the answer to that is that I have no idea!
Anyone have any suggestions on any low carb pastry recipes? Have done a few searches but come up with nothing. I know I could make them with low carb bread as the pastry but hoping I can find something closer to pastry.
