    Coconut Flour

    Has anyone purchased or used coconut flour. Its a good substitute for wheat or soy. In a recipe that uses say 200g normal flour you can replace it with 200g coconut flour as long as you add some eggs to the mix. Coconut flour hasn't got any gluten so the eggs act as gluten. That's what was said on the Mercola site. Anyway, this site sells coconut flour. Has anyone purchased from there?

    Hey Snez, speak of the devil lol I havn't used it yet as it hasn't been available in Australia but then last week I found some and posted where here Nut Flours
    I have been sick so havn't got around to ordering but will soon.

    Apparently because it is defatted it is lighter making it a good alternative. I suspect you could get the same effect from grinding lite dessicated coconut but I avoid things with added sulphites so havn't tried it.

    You must start cooking with it so you can report what its like. It would be good to make the base for a cheesecake?

    Snez I havn't made anything yet as I have been really, really tired but I have been reading up about it and from what I have read it can be a little tricky because its pretty much all fibre so absorbs liquid really quickly.

    I remember with the POH muffins it was best to put in the oven straight after mixing or the husks would absorb all the liquid so I assume the coconut flour will be like that but perhaps worse? Need to use extra liquid.

    Silly me just made a cheesecake last night too and forgot all about the flour.

    If today goes alright I will have a play with it.

    Also, as per my first post from the mercola site - you have to add eggs to act as the gluten.
    I'm looking foward to that lowcarb base recipe!!
    Where did you get your coconut flour from I want some!

    Sherrie I was just about to order the coconut flour which was about $14 and noted the postage just for 1kg was going to be $13 for Perth WA. I emailed them and they said that in Feb they are dropping their postage charges to $6.95. So, I'll get some then. I sound like a cheap skate!!

    Wow I'm glad they are lowering that postage. I forgot to order last time but next time I might order their coconut cream concentrate as well.
