Okay after sampling a non low carb dark chocolate and strawberry muffin at a local farmers market, I decided to make a low carb one. I wanted to try it as a friand this time and next batch I will make a muffin version. The oldies might recall the old low carb strawberry friand recipe: Almond and Strawberry Friands
Anyway, for this one I used almond flour and little coconut flour, as this was last minute and that was all I had, but instead of the coconut flour which isn't very low carb you could use husks, flax, lupin?
I used frozen strawberries - after cutting them I popped them back in the freezer until I was ready to mix them into the batter. Oh and I used muffin pans as I had no friand one.
I am having trouble tasting, but Garry commented that this is the best I have done so far, so I am hoping they're really good
Low Carb Dark Chocolate and Strawberry Friands
Serves 12
100g strawberries, chopped or halved
100g lindt 85% chopped or broken into smallish pieces
1 1/4 cup almond meal
1/2 cup of coconut flour or other flour of your choice
6 eggwhites
50 splenda tabs crushed or 1 cup of splenda granular or equivalent sweetener
150g butter melted, cooled
1 tsp vanilla
Preheat oven to 180C and grease muffin/friand pans.
Mix all dry ingredients together, add vanilla to butter then mix into the flours. Add chocolate and strawberries and then add egg whites.
Spoon into muffin pans evenly and wack in oven for around 25-30 mins.
