I know its 3 days of only protein, but are you limited to the amount of protein you eat for each meal or snack like you are in the next stage?

Yes, Emma, you are.
Meals are up to 100g for women, 150g for men.
Snacks are 50-100g.
Remember, you MAY eat as often as an hour after the last time you finished eating ... but MUST eat at least three hours after.
That means, if you last snacked 90 mins ago, and are hungry, you can snack again, you don't have to wait out the full 3 hours before eating again.
