my carrott juice
I am starting on a low carb diet, waiting for my Atkins book to turn up and in the meantime reading as much here and online as I can.
never haven given much thought to it before I assumed eating all vegatables was being """really""" healthy.
I read somewhere that only to eat the vegatables grown above ground so now this has me concerned as I have carrot and celery juice twice a day and have done so for the last 15 years, wondering how is this going to fit into my low carb lifestyle.

Carrot isn't usually allowed on a low carb diet as it is considered a high carb vegetable. Personally I don't think it is, as if memory serves correct it is only around 5g per 100g which isn't that high! However, when you juice something you process it, which makes it absorb faster and therefor spike blood sugars faster but also, when you juice something, you concentrate it. How many actual carrots do you drink?

I fear I use far to many for a low carb diet, but not as many as I was using when having my cancer treatment a few years ago, I lived on my carrot juice and declared it is what kept me alive, had to cut back a lot as I was turning a funny orange shade...LOL
I would use three medium carrots, orange or purple ones, with four sticks of celery, and on an odd occassion if sharing it with any one else will put apple in there. I will use up this week what I have left in fridge then cut back for a while. Going to search now what vegatables I can juice as I do look forward to my mid morning drink, as I only have one coffee a day and that is when I get up around the 5.30 mark.

Just checked out that nut tab, wow really complex information given hey?
I am not sure what carbohydrate reading to use though, with or without alcohol? And what is with the total sugars and starch readings

You want to go by "Available Carbohydrate, without sugar alcohols" This is the total carbohydrates or "net carb" in Atkins terminology. Counts such as starch, sugars etc are just individual breakdowns of the various carbohydrates within the food.
