Thumbs up Low Carb Chocolate Cheesecake Brownies

These are yummy, I found this recipe in the Delicious mag and de-carbed it. I think it originates from a cafe in Melbourne called APTE. Keep in mind I have cut out the equivalent to 3/4 cup of sugar to suit my tastes, I omitted half a cup from the chocolate batter and 1/4 cup from the cheesecake batter, I also added a dash of vanilla to the cream cheese batter at the end there because I felt it needed it, oh and I used 50g less chocolate (original says 250g). If you're not used to dark chocolate yet you may want to use extra sweetener then what I used for the chocolate batter, just taste it as you make it and see what you think. You're meant to use a 23cm square cake pan but mine was only around 21cm. I had a bit of trouble swirling the chocolate on the top as I think I had too much chocolate!






Low Carb Chocolate Cheesecake Brownies


750g/26.5oz cream cheese, softened
200g/7oz Lindt 85% dark chocolate, melted
4 eggs
250g/8.8oz butter, softened
3/4 cup(plus 1 teaspoon per 1/4 cup for non metric users) almond meal (next time I plan to roast some hazelnuts and use that)
1 1/4 cup of splenda or 63 tabs, crushed.
dash of vanilla (optional)

Preheat oven to 160C/320F and grease and line a 23cm square cake pan

Cream butter and 3/4 cup or 38 tabs of splenda. Once thick and pale add 2 eggs one at a time making sure to beat well after each addition. Mix in the melted chocolate and then the almond meal until well combined.

Add two thirds of the chocolate mixture to the pan spreading evenly. Next beat the cream cheese and 1/2 cup/25 tabs of splenda until smooth then add eggs one at a time beating well. If you like add a dash of vanilla.

Add the cream cheese mixture to the cake pan spreading carefully and then dollop the remaining chocolate batter over the top and then swirling it through the cream cheese.

Place in oven and bake for 1 hour and 15mins or until the center is just set. allow to cool completely in pan, them remove and cut into 16 squares.

This is just me personally but I find if I don't make things too sweet I can have more control over them. If I accidentally make something too sweet that's when I usually have trouble.

I have another batch in the oven but this time I roasted some hazelnuts and ground them up instead of the almond flour. The chocolate batter tasted like Nutella so I am looking forward to these

I preferred the first batch using almond meal better but when I made the hazelnut ones I also decided to use up a block of dark choc I found in the pantry, it wasn't lindt, just another dark choc that had more carbs, the choc didn't taste the greatest so that could have been why also but I would probably use almond meal the first time to be safe. Also make sure to taste the batter as you go as you may find you need more sweetener then I do especially if you use lindt 85% and your family are not accustomed to the 85% I am lucky, we all love the 85% here

Thanks for that Sherrie. Maybe I'll use the almond meal for my first batch. I got plenty of lindt today because it was on special. The last 2 blocks I bought lasted like 6 months in our cupboard, so it wont be going anywhere fast. Thanks for the tips.
