Mushroom and Spring Onion Crustless Quiche

3 large eggs

2 spring onions, thinly sliced

500g mushrooms (mix them up for different flavours!)

1 tub of pure cream

1 ½ cups of grated cheese

pinch of nutmeg

salt and black pepper (freshly ground)

butter and olive oil (around 1 tablespoon of each)

 

Method

1. Preheat oven to 180C

2. Melt butter and oil in pan, saute spring onions until soft and then add mushrooms and season ewith salt and pepper, continue untill mushrooms are soft and browned.

3. In a well greased quiche dish, add half the grated cheese then the mushroom mixture and then the remaining cheese.

4. Mix remaining ingredients in a bowl, season with salt and pepper then pour over mushrooms and cheese..

5. Bake for around 30 mins or so
