    Creamy Zucchini Soup 1 Zucchini sliced 1/4 Onion diced 2 Fresh Basil Leaves Ricotta cheese Salt Pepper 1. In pan, Soften onion in olive oil sprayand tblsp water (you dont want to brown the onion!) 2. Add zucchini and basil and 1 cup of water. 3. Simmer until zucchini is soft 4. Remove from heat. 5.     Zucchini Pasta Slice zucchini into very thin strips Spread zucchini strips in a thin layer across paper towel. Cover lightly with paper towel and leave on bench to dry out for 3 - 4 hours.
