Basic Muffin Mix
These versatile sugar-free and low-carb muffins can be the basis for many variations, including low carb blueberry or herb muffins.
Ingredients:
• 2 cups almond flour/almond meal
• 3 teaspoons baking powder
• 1/4 teaspoon salt
• 1/2 cup (1 stick) butter, melted
• 4 eggs
• 1/3 cup water
• Sweetener to taste -- about 1/4 cup or 1/3 if you like sweeter
• Add what ever essence you choose,eg vanilla, coconut, coconut rum
Preparation:
1) Preheat oven to 180c.
2) Place 12 muffin cases on baking tray.
3) Mix dry ingredients together well.
4) Beat well the wet ingredients (tip melt butter but let it cool or it will turn to custard)
5) Add wet ingredients and mix thoroughly
6) Put in muffin tins (about 1/2 to 2/3 full) and bake for about 15 minutes.
Variations: Add 1 cup fresh or frozen blueberries/raspberries for berry muffins. *See recipe for blueberry version 2 posts down :)*
Nutritional Information: Each of 12 muffins has approximately 2 grams carbohydrate plus 2 grams fiber, 6 grams protein, and 185 calories.
