    • Asian omelette - oven baked.

      8x eggs whisked with 2x tablespoons of light soy sauce, 1 teaspoon sesame oil, dried chilli flakes to taste (I used 1 tsp) , about 1/2 cup of chopped Coriander and 6x thinly sliced shallots - set aside.
      Sauté 250 gm sliced mushrooms with 2x cloves crushed garlic , add about 400gm of cooked prawn meat and 3/4 cup fresh bean sprouts. Cook until there is no liquid.
      Spread in a lined 10 inch dish and pour egg mix over and bake in moderate oven for about 15 to 20 mins.
      I served my husband's with Sweet Chilli and Ketchup Manis.

      Very low carb and was delicious and will be nice for lunch tomorrow, Enjoy !
