    • Balinese Tofu Fritters


      Even if you don’t like tofu, you will love these sunny little morsels. Delicately seasoned and deliciously fragrant serve them for brunch with you r favourite relish or with Nasi Campur

      Makes approximately 15

      2 garlic cloves
      3 tsp crushed galangal
      2 tsp kencur
      ¼ tsp shrimp paste
      1 large red chili
      1 small hot red chili
      1 egg
      2 lime leaves shredded
      250g firm tofu
      1-2 tbs fried shallots
      3tsp palm sugar
      ½ tsp salt
      Enough coconut oil to shallow fry.
      Blend the spices in food processor add the tofu and blend until it is crumbly.
      Stir in the beaten egg and sea salt and fried shallots

      Heat heavy based pan over medium flame. Form fritters about a tablespoon each and fry fritters until golden brown.
