Spicy Beef Soup
Ingredients:
750ml (3 cups) water
750ml (3cups) beef stock
6 green onions, coarsely chopped
2 cloves garlic, sliced
3 fresh coriander roots
2 tbsp dark soy sauce
2 tsp brown sugar
1 fresh small red Thai chilli, finely chopped
375g beef round steak, thinly sliced
425g can straw mushrooms, drained
1/4 cup (60ml) lime juice
1 tbsp fresh coriander, coarsely chopped
Method:
1. Combine the water, stock, onion, garlic, coriander roots, soy sauce, sugar & half the chilli in a large saucepan. Bring to the boil; reduce heat, simmer, uncovered, for 15 minutes. Drain mixture & discard solids. Return stock to the same cleaned pan.
2. Bring stock to a boil, add beef, mushrooms, remaining chilli & juice; reduce heat, simmer, uncovered, until beef is just cooked. Stir in coriander & serve.
