    • Low Carb Leek and Spinach Quiche

      I made a nice and simple quiche last night, it was good, even my son liked it. It didn't set quite firmly enough though was cooked through fine. Silly me forgot all about squeezing liquid out of spinach and just mixed it straight in after steaming so that could be why. I am thinking I might try gorgonzola with it next time.


      Leek and Spinach Quiche



      Ingredients:

      1 leek, sliced thin
      1 bunch of spinach, stalks removed, coarsley chopped.
      1/4 cup of fresh basil leaves, shredded
      1 cup of cheese, grated
      1 tub of sour cream
      4 eggs
      salt and pepper
      butter

      Method

      Preheat oven to 200C

      Steam spinach until limp and squeeze out any liquid.

      Pan fry leek in butter until soft.

      Whisk eggs, mix in sour cream then cheese, seasoning, basil, leek and spinach.

      Wack in greased quiche flan and bake for 40 mins or so.
