    • Stuffed Red capsicums

      This made about 10 sm/med halves

      5 medium red Capsicums - halved and de seeded and de veined.
      2 onions chopped
      3 cloves garlic
      1 kg beef mince (lean)
      1 cup mushrooms, finely chopped
      2 Tbl Sambal Olek (chilli paste)
      1 Tbl Hot Piri Piri seasoning (masterfoods)
      3/4 cup pitted kalamata olives, chopped
      3/4 cup semi dried tomatoes, chopped
      1 cup chopped feta (low fat)
      1 cup fresh oregano
      1/2 cup torn fresh basil
      1/2 cup pine nuts
      Salt and pepper to taste


      Fry onions with garlic. Fry until soft and add 2 tablespoons of Sambal Olek (chilli paste).
      Add chopped mushrooms with beef mince - brown.
      Add fresh Oregano and Basil, add Kalamata Olives and semi dried tomatoes.
      Continue stirring and add about 1/2 cup pinenuts and I added salt and pepper and also about 1 tablespoon of Masterfoods Hot Piri Piri seasoning , I felt it needed a litte oomph. Let cool a little and add low fat Feta - the reason I used low fat was that it holds its shape a little better.
      Spoon and squash as much mixture into Capsicum halves as you can - arrange tightly into lined roasting pan - top with grated cheese.
      Bake about 50 mins 160 oven.
