Thigh fillets stuffed with blueberries pine nuts and swiss cheese

    • Thigh fillets stuffed with blueberries pine nuts and swiss cheese

      4 x thigh fillets
      punnet blue berries
      toasted packet of pine nuts
      2 sage leaves per thigh
      4 x Swiss cheese slices
      4 x prostucio slices (long ones if you cn get them)
      2 x tooth pic per thigh

      place fillets between glad wrap and flatten with mallet as much as possible

      lay a slice of prostucio on glad wrap
      place thigh on top
      sprinkle with pine nuts
      place blue berries in middle as many as fits
      top with swis cheese (may have to fold in 1/2 if large)
      lay sage leaves end to end
      season with salt and white pepper
      and then
      carefully roll up and secure with tooth pics

      pop into a shallow casserole dish with lid

      set in fridge for about an hour so they hld shape

      pre heat oven to 180c fan forced and cook for about 30 minutes
      take off lid raise to 200c and let brown up about 10 minutes.

      Serve with what ever takes your fancy.
