Low Carb Macadamia Shortbread
80 gm of Melted Butter
2x cups of Almond meal
2x tablespoons of Stevia (or sweetener of choice and more to taste)
1/2 cup of chopped Macadamias
Mix the above all together - mix will be sticky. Form into a log and wrap in glad wrap tightly , then place in Freezer for about an hour or firm enough to slice into 1 centimetre rounds. If this crumbles put back in freezer to firm up.
Preheat oven to 170C/338F (fan forced)
Bake on lined trays - moderately hot oven for about 15 mins. Cool on trays. Crispy and delicious.
Note : I used the almond meal with the skins on. Macro brand from Woolies. You can leave the nuts out and add lemon zest ofr a different taste. Enjoy.
