We loved this tarragon chicken dish, its very low carb. We served ours on pan fried green beans but you may prefer a mash to soak up the sauce. We only cooked enough chicken for 2 because we weren't sure if we would like this or not but after we were wishing we had more!

Serves: 2-4
Ingredients:
500g - 1kg /1-2 lbs of boneless chicken thighs, sliced
3 spring onions/scallions, sliced thinly
2 cloves of garlic crushed
1 bunch of fresh tarragon
90ml / 3 fl oz of white wine
125ml/ 4.2 fl oz cup of heavy/thickened cream or use coconut cream to make it paleo
1/4 tsp of sea salt
white pepper corns for seasoning
oil/ghee for cooking
Method:
Brown chicken in some oil or ghee, add spring onions and crushed garlic and fry for a few minutes before adding the tarragon, salt and wine.
Once the wine boils bring down to a simmer until chicken is cooked through.
Add cream and let it warm up a couple of minutes, season with pepper and serve.
