      Baked Eggs in Salami Cups


      Ingredients

      Salami (or bacon/ham)
      Eggs
      Grated cheese
      Herbs of choice
      Salt N Pepper

      Method

      Preheat oven to 200C. Place a few slices of salami in each hole of a muffin tray to make a salami cup. Make sure the slices overlap to make a cup. Sprinkle some grated cheese into the salami cups. Then crack an egg into each salami cup. Sprinkle with salt n pepper, any herbs you like, and more grated cheese. Bake for 15 - 17 minutes for soft boiled eggs, or longer if you like your eggs more firm.

      * You could make these with bacon or ham cups.
      * You could beat your eggs before pouring them into the cups for a different effect, adding tabasco/sriracha, different cheeses etc to the beaten egg mixture.
