    • Sushi with cauliflower 'rice'

      Sushi with Cauliflower 'Rice'

      1 head of cauliflower, riced
      1 or 2 tbsp rice wine vinegar or apple cider vinegar
      Sweetener, to taste
      Nori sheets
      Kewpie mayonnaise
      Wasabi (optional)
      Fillings of choice (avocado, chicken, smoked salmon, cucumber, sesame seeds, carrot, sprouts etc)

      Prepare your cauliflower rice as you would normally. Some people blitz in a food processor and steam, some grate their cauliflower and fry up in a pan until fluffy like regular rice. Put your prepared rice in a bowl and fluff with a fork, add vinegar and sweetener to taste, and allow to cool. (Don't use hot cauliflower, it might tear your nori sheets).

      When rice is cool, fill your nori sheets with cauliflower rice as you would normally, add fillings of choice and kewpie mayo, roll up with a sushi mat and oila, LC sushi!

      You could make a dipping sauce of tamari, ginger, sweetener etc
