Experimental EVOO-vinegar "Dressing"
I had a little too much gelatin and hot water in a jar yesterday, and decided to put some in a small jar with white and malt vinegar, and EVOO.
I kept shaking the jar (with the lid on it
) until the gelatin caught hold of the oil.
Put it into the fridge overnight.
It gelled nicely without separating. I like the taste, texture and consistency.
Not as nice as homemade mayo, but quick and will make a nice condiment.
Next round, I may add salt or a raw egg yolk.
