    • Coconut Muffins

      These could be flavoured with lemon or orange zest and extracts, but they are lovely as is served cut in half and spread with butter and sf maple syrup, or jam and cream. They are really dense and filling, so I have only made three. You could double or triple the recipe. And they are perfect for a lunch box snack, indeed I will be taking them to skool. :)

      Coconut Muffins (makes 3: with 2g carbs per muffin)

      2 eggs
      1 cup desiccated coconut
      1/4 tsp bicarb soda
      1 tsp vanilla
      SF maple syrup, to taste
      1 1/2 tsp natvia (I used icing sugar mix)

      Preheat oven to 150C.

      Put everything in a bowl and stir thoroughly to combine.

      Divide mixture amongst 3 silicon muffin cups and bake for 40-45 mins or until firm and springs back to the touch.

      Serve hot, or cold from the fridge, or freeze 'em for later.
