Hello all. I am fairly new to the LCHP/F eating plan, and doing well so far. But I have a bit of a challenge working out a good menu for an upcoming long-distance kayaking trip. I plan to travel 160km over 7 days on the Murray in late April. By then I should have my goal weight in sight, so I just need to develop a menu that can fuel my greatly increased fuel requirements while not over doing the carbs.
I estimate my calorie requirement will be about 2500 per day.
I was thinking of the following as staples:

I was thinking of the following as staples:
- Dried and tinned meats and fish (Jerky, tuna, salmon, sardines, shredded chicken etc.)
- Vacuum sealed deli meats.
- Vacuum sealed antipasto.
- Cheeses.
- Eggs (packed well, first couple of days).
- Dried vegetables and boullion for soups. (In the past I have made a fantastic laksa from dried coconut cream, curry powder, dried shrimps, dried chicken boullion, and dried veggies. Just no dried noodles this time),
- Nuts and seeds for snacks.
- Atkins high protein bars.
- Dried low carb fruits (limited quantities).
- Limited low GI whole-grain crispbreads.
- High protein no sugar drink powder.
- Dehydraded whole meals (low-carb chili con carne, spaghetti-free bolognese etc.)
