This can be eaten for breaky or dessert.
Chocolate Chia Pudding
3/4 cup coconut milk ( I used vitasoy coconut milk in the carton at 2g carbs per 250ml)
I tsp vanilla essence
2 tsp natvia icing sugar
20ml sf maple syrup
3-4 tbsp chia seeds
3/4 tsp cocoa powder
Add ingredients to a screw top jar in that order and shake vigorously, allow to set overnight in the fridge so the chia seeds gel up.
Serve with thickened cream, whipped or not, if you desire. Or add crushed nuts, berries, flaked toasted coconut etc. Or just eat as is.
You could use almond milk and any sweetener you prefer. This dish is filling and it comes out at about 2g carbs for the batch!
