      Pepper Beef Hotpot


      Going Paleo Pete Evens

      1 X 1kg beef shoulder, cut into 3 cm cubes
      1 teaspoon sea salt
      2 tablespoons coconut oil or other good quality fat
      4 garlic cloves finely chopped
      2 onions chopped
      2 carrots chopped
      2 celery stalks chopped
      1-2 long red chillies deseeded and finely chopped plus extra sliced chilli to serve
      2 spring onions chopped
      1.5 litres (6cups) beef or chicken bone broth
      1 teaspoon ground all spice
      ½ tablespoon freshly ground black pepper plus more to taste
      1 teaspoon thyme leaves
      2 bay leaves
      3 silverbeet leaves trimmed and torn

      Place the beef cubes in a bowl, rub with the salt and let sit at room temperature for 30 minutes

      Melt the oil or fat in a very large saucepan over medium high heat. Working in batches, add the beef cubes and seal on all sides. Remove the beef from the pan and set aside. To the pan add the garlic, onion, carrot, celery and chilli and cook until softened, about 5 minutes. Add the spring onion an cook 2 minutes. Add the beef back to the pan along with the bone broth, allspice, pepper, thyme and bay leaves and bring to the boil. Reduce the heat to low and simmer gently for at least 2 hours until the meat is starting to become tender (do not allow to boil or the beef will become tough). Add the pumpkin and continue to cook for 20 minutes until both the beef and pumpkin are completely tender. Stir in the silverbeet and cook until wilted about 5 minutes. Season with salt and pepper.

      Spoon into bowls scatter over some sliced chilli and serve

      Serves 6

      In the book Pete does say you can sub the vegetables with anything you like having as mean or as few as you like.

    • I made this on Sunday and it was so good. I did a couple of changes.

      No Thyme so I used Rosemary
      No Bone Broth I used stock powder an water (half beef half chicken)
      No Celery used celery salt
      No Silverbeet used Bok Choy

      I also halved the recipe because I only had 500g beef

      not sure if this link will work if not just google Pete's book for an example of some of the great recipes in it.

      I haven't got that book yet but I have his family food and healthy everyday and I also have I think all of Luke and Scott's books. I might ask them if I can share their zucchini and pear salad that's in their latest Paleo book because I think it's awesome!

      I should have a thing for their Paleo way 10 week program as well from when we went to their tour in Adelaide (it was awesome). I should get on to that as I am pretty sure they only sent Garry one activation when they should've sent two.
