      Custard Cheesecake Tart

      Oven 160'
      Line the bottom of a spring form pan and spray the sides with oil
      Base:
      1 cup Almond meal
      1/4 cup coconut flour
      1/2 cup desiccated coconut
      1x large egg
      1 tablespoon of Stevia
      4x tablespoons of melted butter
      Press into the bottom and up the side of spring form pan, cook in oven for 15 mins
      Filling:
      8x free range eggs
      220gm soft cream cheese
      110gm soft butter
      300ml pure cream
      2x tablespoons of Stevia
      1x tablespoon of Vanilla extract with seeds
      1x teaspoon Almond extract
      Cream butter and cream cheese until smooth with electric beaters, add cream , eggs , Stevia and extracts until smooth.
      Remove hot crust and pour over filling. Bake about 45 to 50 mins depending on your oven. watch it as the topping may brown quickly , adjust temperature if necessary. Cook until just firm. Cool completely and then into the fridge.
      I adapted a recipe and it is really a cross between a cheese cake and custard tart. Make sure you use the best ingredients you can find.
      I served this with strawberries and raspberries with passionfruit.
