Crackers made from American Cheese Slices.JPG
Found this recipe somewhere online. Sooooo easy. Buy a package of sliced processed cheese and cut a slice into 16 tiny squares. Place on parchment and microwave for 30-60 seconds depending on your microwave power. I put some spices etc on them before microwaving. Pictured top left going clockwise: with; Chives, toasted sesame seeds, chili seasoning, paprika, and in the middle dried parsley. In my opinion, the toasted sesame seeds were far and away the best!! Awesome for a snack at nighttime, which only use 1 carb per slice of cheese (according to the cheese slices I bought.) I tried it with sharp cheddar but after microwaving the parchment was drenched in 'orangy looking' grease that came out of the cheese. So I'll stick to the processed even though the other is better for me. -

Made a cauliflower pizza, it's been several years since I last made it
I might make a seperate recipe thread and just link to the old recipe thread because my way of preparing the cauliflower is a lot less fiddly then the way I remember it with the old recipe. My sun dried tomatoes went mouldy urghh so I used fresh tomatoes instead.

Zoodles Alfredo.JPG
Got my julienne peeler (Oxo Spiralizer-brand name) in the mail the other day. Last night I made Zoodles Alfredo. YUM! I tried the shirataki, but couldn't get over the texture. Food is all about texture (and taste) to me. So zoodles are an awesome substitue for pasta! I'll definitely make this again. I think I'll mix in a bit of spiralized carrots for colour though. Wondering if I can spiralize eggplant? I'll try! -

Lamb Fricassee, it's based off a Jamie Oliver recipe if I remember right. I'll get Garry to help me jot down what he did and post recipe as it was really good
It's basically lamb cooked with lettuce and stock ( Garry used leftover Roast Chicken carcass) and towards the end an egg, lemon and dill sauce is added and then it's served with yoghurt. I think that's how it went!

Massaman chicken curry (Thai) with chicken drumsticks, coconut milk, mushrooms and red capsicum.
On steamed cauliflower instead of rice.
Was pretty good.
