1 minute microwave Low Carb Savoury Muffin recipe.
I’m not sure where I got this recipe from because I end up googling heaps of low carb sites and YouTube too...I think it was YouTube actually!
Ingredients
1 tablespoon of melted butter
1 large egg
2 tablespoons of almond flour
1/2 teaspoon of baking powder
A pinch of salt and pepper
1/3 cup of the 4 mixed cheese packages. (Optional)
Method
Melt butter and cool
In a medium sized ramekin dish beat your one egg in it.
Add almond flour, baking powder and salt a& pepper.
Mix through really well.
Add cheese and then butter and mix through again.
Place in Microwave and set on high for 1 minute or in my case it’s 1.10 due to my wattage. Take out carefully with gloves because dish is very hot and place on a side plate. Let cool a bit then run a knife around the outer edges and tip out onto plate. Heat a pan with a little bit of butter or oil, place muffin in pan and brown gently, flip and do other side for a minute too. Remove back to plate and cut in half and return to pan and brown those sides.
You can add extra cheese to muffin and melt, then top with bacon, egg to make an egg and bacon McMuffin or with anything actually.
Extras to make it more dense and full of fibre.
Follow recipe as above except melt 2 tablespoons of butter.
Add 1 teaspoon of psyllium husk and 1 tablespoon of linseed and stir through really well.
Cook in microwave for 1minute and 20 seconds.
Repeat the same procedure as above in cooking in pan.
These below are of the original recipe. I’ll post another when I make the one with added ingredients. You could also make a sweet version of these by adding sugar substitute and omitting the savoury elements and having like a scone with cream and some natural fruit stewed in microwave to form a jam type mixture.
