      Found this recipe in a mag and thought it looked good :)

      Low Carb Chargrilled Vegetable Terrine

      300g antipasto mix (I was thinking artichoke hearts, capsicum, eggplant and mushroom would be a good mix)
      3 zucchini sliced thin, lengthways
      80g feta cheese, crumbled
      80g cheddar cheese, shaved
      12 fresh basil leaves, torn
      2 TBL Olive oil
      freshly crushed sea salt and black pepper
      basil leaves to serve

      Preheat BBQ or chargrill on high heat

      Preheat oven to 180C

      Brush zucchini in oil and season with salt and pepper, chuck on BBQ/Grill in batches for 1-2mins per side until lightly browned.

      Grease loaf pan and line with baking paper then layer half of the zucchini in a single layer, slightly overlapping. Next add a quarter of the cheeses and a quarter of the basil, then season with salt and pepper. Top with a quarter of antipasto mix, rinse and repeat until all used up. Line top with remaining zucchini and bake for around 25 mins.

      Let stand for 10 mins then turn out onto plate, peel off baking paper and sprinkle with basil leaves and season with freshly cracked black pepper.
