      Okay sorry I forgot to add this one, I found this with the mice BBQ pizza one :)

      Vegetable Quiche with Mince Crust


      500g beef mince
      1 onion, diced
      1 garlic clove, crushed
      1 Tbl Olive oil
      1 egg, beaten, lightly
      1/4 cup of freshly grated parmesan cheese
      1 TBL plain flour (maybe substitute or let it be?)


      240g carrots (about 2), grated (we could always sub that or use less of that and more of something lower in carbs if needed)
      1 medium leek, sliced
      2 zucchini, grated
      1 red capsicum (red pepper), chopped finely
      4 eggs, beaten lightly
      1/3 cup freshly grated parmesan cheese
      2 TBL fresh basil, shredded
      2 tsp seeded mustard
      30g butter

      Crust: Heat oil in pan and fry mince, garlic and onion until nice browned then cool.

      Filling: Heat butter in pan and fry leek until soft. Add remaining veggies and stir until tender then cool in a mixing bowl.

      Crust: Stir in egg, cheese and flour then mix well. Press mince into a 23cm pie plate.

      Filling: Stir in eggs, cheese, basil and mustard, mix well then pour filling into crust.

      Bake at around 180-200C for around 50 mins or until set
