These are incredible! I tried them with orange extract, then mixed splenda with the cinnamon and sprinkled on top. When I baked them, I put the muffin pan in a second pan, then filled that pan with an inch of water, so that the tops didn't crack. My husband (also on low carbs) doesn't really like cheesecake, and he ate most of them! Such a wonderful recipe to get imaginative with. Thank you for this one.

These are so great i make them all the time. I like to eat them warm, as do my non low carb friends and family. I dont have a microwave so i just mix up the eggs, cream cheese, vanilla and splenda, Chuck them in the oven for 20 mins at 175C, beautiful! These are great if you know you are heading out that day, as they are so quick to make, or put them in the fridge for the next day to take out. I make half a batch these days, in case i accidentally eat them all just out of the oven, well after about 10 minutes of cooling down time! My mother in law thinks these are divine, if only she knew how easy they are to make!

It has been a big week for me since discovering this wonderful site. I have made the Cream Cheese Muffins, today the Cauilflower & Bacon Soup for my winter lunches so I made a double batch, the Crackers with cheese and almond flour, 'Potato' (choko) Bake and the Mock Apple Strudel (with chokos). I am so excited about these new additions to my basic interpretation of Atkins cooking for T2 diabetics as cheese crackers are the thing I missed the most.
Cauliflower will be on my weekly shopping list 'cos I am going to try the garlic bread after such a successful pizza attempt a few days ago. There will be no stopping this loser now. By that, I mean the weight and the T2 diabetes.!!!!

With the tablets all you need to do is crush them with a back of a spoon then chuck them in the cream cheese mixture, nothing special required. I often just mix mine with a fork.Low Carb in a Nutshell ~ Carb Counts ~ Research ~ Measurements/Conversions ~ Glossary

I made a half batch of these today, and added some almond meal as well. I put 2 eggs in instead of 1 (cus I was halving everything else) and they are not too bad. They have a bit of a weird eggy consistency (but I ate mine warm cus I'm impatient) so they might be better cold.
I think they might be better with a pinch of baking soda and salt as well. Then they will be lighter, and the salt will offset the vanilla and splenda. -

Now I too made another batch today. Used the orange essence and put some finely cut slivers of orange peel on top and some Five Spice sprinkled over the top as I didn't have any cinamon left. I make the batch go into smaller serves and make 24. Like the idea of adding almond meal though!
