I made this ages ago, as I said I would. It was good, my wife really liked it.
I'm trying to come up with things I can make a few days before and pack into a plastic container for lunch. This will do nicely. I don't think I got it perfect last time, but it was still pretty good.
I'll cut back on the artificial sweetener next time, maybe use half. I find once I've been low carbing even for a week my sensitivity to sweetness goes right up. I think that was the one thing I didn't like about the cake last time, the taste of the artificial sweetener was a little too strong. -
Yep I always end up using less, what I do when cooking low carb versions of sweet things is measure the sweetener out then add it a bit at a time and taste until it's just sweet enough as it usually tastes sweeter once cooked or set in fridge anyway.Low Carb in a Nutshell ~ Carb Counts ~ Research ~ Measurements/Conversions ~ Glossary
