These almond, lemon and poppyseed biscuits are really yum, found them in a super food ideas mag and converted them to low carb. Even Garry loves these and he's really fussy with artificially sweetened stuff.

Almond, Lemon and Poppyseed Biscuits
150g butter
2 cups almond meal
1 cup splenda or equiv (I don't use splenda anymore)
1 large egg
1 Tbl Lemon juice
1 Tbl Lemon rind (I just used the rind from 2 lemons)
1 Tbl Poppyseeds
1.5 tsp baking powder
1. Preheat oven to 180C
2. Line 2-3 trays with baking paper
3. Cream butter and splenda until pale then beat in egg.
4. Sift almond meal and baking powder over butter mixture then add other ingredients and combine.
5. Roll level tablespoons of batter into balls and place on prepared trays 5 cm apart. Now I did mine differently here, recipe says 30 biscuits so 10 per tray, I made 24 spread across 2 trays, they had plenty of room.
6. Chuck one tray at a time in oven for 12-15 mins or until light golden in colour. I preferred to use the second rack so they don't brown around the edge too fast and give the rest time to brown.
7. Cool on trays for 5 mins then cool completely on wire rack.
Now I will have to do the counts next time because silly me forgot to weigh some of the ingredients to help with working it out.
