    • Lupin Waffles

      Makes 4 waffles

      30g vanilla protein powder
      2 tsp granular splenda
      1 tbsp gluten flour
      2 tbsp lupin flour
      1 tsp baking powder
      generous pinch of salt
      1/2 cup soy milk
      1 tsp imitation vanilla
      2 tbsp lactose free cream
      1 egg yolk
      2 egg whites (whisked to stiff)


      Combine all the dry ingredients, then combine the wet ingredients except the egg whites. Stir the wet into the dry until well combined, then gently fold the egg whites through the mix, taking care not to flatten the mixture too much. Cook about three tablespoons at a time in a hot waffle iron lightly sprayed with cooking oil. They cook pretty quickly - and if you dont spray they will stick a bit.

      Freeze beautifully, toast magnificently and taste brilliant with sugar free maple and lactose free cream :D
