    • Salmon Patties

      Thinking that riced cauliflower is so versatile, I made these tonight

      2 cups riced cauliflower
      1 tin of salmon drained and mashed up (210gms)
      2 tablespoons chopped parsley
      1/2 cup parmesan cheese grated
      2 beaten eggs
      1 teaspoon dill
      salt & pepper

      Microwave the cauliflower for 2 mins without water and allow to cool.
      Mix together with all the ingredients and form into patties and pop into fridge on a plate to chill out!

      Cook in pan with oil of choice until golden and serve with a squeeze of lemon.
      Makes about 8

      Not confident working out carbs etc but the tin of red salmon says per 100 grams Protein 16.8g fat total 10.1g Saturated 2.2g carbs 0.0g sugars 0.0g sodium 415mg

      Thanks so much Clearviews for the salmon patties recipe which sounds yummo.

      I will make these during the week, my parsley is growing well with all the rain so
      will put heaps of parsley in mine. Having parmesan cheese in it will give it a lovely
      taste too.....can't wait to try it, thanks.
