This is Linda's ( from CK & other places
) recipe no carb meatballs
Lynda's low carb meatballs:
* 200g chicken breast mince (make sure is 100% breast, you can make your own)
* 200g cauliflower steamed then minced in food processor (instead of breadcrumbs)
* 1 small diced onion (dry fried or with a light spray of olive oil)
* flavouring of chocie i.e. teaspoon of curry powder, 1/2 tsp of morrocan seasoning etc, teaspoon of tamari)
Mix all ingredients together, spoon mixture in meatball sized portions (approx 80g) onto a tray lined with baking paper and cook in 150C oven for approx 20 mins.
The cauliflower binds the mixture, and baking them means no added oil.
Freeze in zip lock bags
I think I will do these with lamb mince and then with beef mince as well.
