      I'm not doing Cohen's but found some of the recipes to suit low carbers so thought it would be a good idea to put some of the recipes in one thread so that way it would not just suit low carbers but also suit Cohen's followers.

      Zucchini Frittata
      Time: 10 mins
      Difficulty: Easy
      Serving Size: Serves 1

      Zucchini (Grated)

      Onion (Thinly Sliced)

      1 Egg

      2 Crackers (crushed)

      1 tsp Psyllium Husks

      Salt, Garlic Powder & Paprika (approx 1/4 tsp in total)

      prepare onion & zucchinni
      Crush crackers (4 salada squares or 2 premiums)

      Measure & mix together the Salt, Garlic Powder & Paprika (approx 1/4 tsp)

      Beat your egg
      Once all ingredients are prepared mix vegetables together, then add seasonings - mix well

      Add beaten egg and mix well

      Add crushed crackers & Psyllium Husks

      Add small dollops to a lightly sprayed non-stick frypan and flatten out into mini frittata shapes, place the lid on the fry pan and turn the heat down to low to make sure they cook all the way through without burning the bottoms, flip when cooked & Enjoy!

      Zucchini Hash Browns

      1 Egg
      Zucchini, grated (allowance)
      Onion, thinly sliced (allowance)
      2 Crispbreads, crumbed

      1. Mix the vegetables
      2. Beat egg and add to vegetable mix
      3. Add crispbreads to mix with herbs
      4. Pour into frying pan in small sections and cook both sides

      Zucchini Pasta

      Slice zucchini into very thin strips

      Spread zucchini strips in a thin layer across paper towel.

      Cover lightly with paper towel and leave on bench to dry out for 3 - 4 hours. Alternatively, put in fridge for the day.

      Lightly sautee strips in pan with a spray of cooking oil, together with garlic or any herbs you desire, until golden brown. A medium heat works best if you like it crunchy, lower heat will make the strips softer.

      Enjoy as a substitute for pasta! Best eaten immediately.

      This will not freeze, but prepared, uncooked strips will last in an airtight container in fridge for several days.

      Prawn, Asparagus and Mango Salad

      salad leaves


      salt & black pepper






      mint leaves


      De-shell cooked prawns

      Pre wash salad leaves

      In a bowl add salad leaves, tomato, asparagus (canned), tomato and onion in a bowl.

      add salt and pper to taste with a small amount of vinegar & garlic. add in prawns.

      Sit aside for about 30min in the fridge covered.

      Just before you are ready to serve, add in mint, parsley and mango.

      Creamy Zucchini Soup

      1 Zucchini sliced
      1/4 Onion diced
      2 Fresh Basil Leaves
      Ricotta cheese

      1. In pan, Soften onion in olive oil sprayand tblsp water (you dont want to brown the onion!)

      2. Add zucchini and basil and 1 cup of water.

      3. Simmer until zucchini is soft

      4. Remove from heat.

      5. Add ricotta

      6. Blend til smooth and creamy.

      7. add salt and pepper!

      You can use fetta in place of ricotta. If you plan on that then I'd reccomend to also add garlic
