you could prob add some berries of some sort into the mix to give some sort of resemblence of icecream
i use to make a while ago. a yoghurt and berry iceccream was really good. use to have this for breaky every day . -

I only use about a third of a cup of sweetener, Dragonlady, and I make nearly a double batch with that. I just up the vanilla essence and it tastes fine
Sinders, 2 more eggs ~ lots of egg white to counter the extra cream (and get about 2 litres from one batch! :D) I mixed with my hands and got it to a "mousse" consistency without breaking up the whites. You're right ~ that's the way to go
I made up a weird cheesecake thing yesterday. Just 250g of cream cheese, 250ml of cream and half a cup of frozen strawberries... zoomed in the blender and mixed through a pack of gelatine at the end (I forgot to add it earlier!)
I didn't really like it yesterday but just tried some this morning and it has potential. Probably needs tweaking with a bit of sweetener. I've chucked it in the freezer now to see if it wants to be ice creamNothing tastes as good as being slim feels

I made another batch of ice cream last night. This time I left out the Cottee's syrup and whizzed up half a block of Lindt 85% so it's vanilla choc chip.
I'm going out tonight so I won't be able to try it until tomorrow. I'm hoping it will be delicious.
What sweetener does everyone use? I only have Splenda, but I'm not crazy about the slight chemical taste so I was wondering about other possibilities and I saw references to erythritol. Does anyone use that in their ice cream?

i use xylitol..dont qoute me its the one made from the birch tree or corn husks.. my label is long gone as i bought in bulk. 25kgs.that was 2 years ago. lol. i still have prob 1/3 - 1/2 left. lol...
cant exactly remember anyway just be carefull as the ols. is sugar alchols. so you know what wll happen if you over indulge

Oh yes, I know all about that from my first adventures into sugar-free chocolate. The Darrell Lea stuff was deadly!

I use Perfect Sweet too i like it, and serisouly to me it tastes exactly like sugar, i love it in my tea and it is expensive too, but today i got a bargain 1kg for $13 of Xylitol i was chuffed with that and its the same as the perfect sweet 100% Xylitol, i usually pay $14.95 for the perfect sweet one and its not a kilo i think its only 500grams

I bought a bag of Perfect Sweet on Saturday, but haven't used it yet. I bought it at a health food store and when I asked for erythritol, they looked at me as if I had two heads, so I guess if don't like the xylitol, I'll have to buy erythritol online.
My latest batch of ice cream tastes good, but it is rock hard, so I guess I over-mixed the whites into the cream mixture. I had to defrost it a bit in the microwave before I could get a spoon into it. The 85% Lindt pieces are a little bitter, but it's still good. Trial and error.

Lol! Perfect Sweet is 100% xylitol extracted from Birch trees.

Hmm, maybe try letting it stand for a few minutes when you take it out of the freezer, Fiona.

haha me to scribe straight out of the freezer i have wondered sometimes if i should just leave spoon in the tub lmao.... hehehe but no i dont lol
hey guys did i tell you i tried it with just coco powder i whipped it into the egg yolks. before foldinggthat through the cream turned out not bad. not as good. but defeinetly not bad. well its all gone now. so must of been pretty good. -

I finally got around to making this ice cream yesterday, see I have a kitchen aid with an ice cream maker attachment and the novelty has only just worn off enough for me to *gasp* make ice cream by hand. I had been using the easiyo mix and letting the kids go mad on it.
Anyway yum! I ate about 1/4 of it before it even made it to the freezerthen another couple of spoonfuls while it was chilled but not frozen the kids found it and it was almost a riot when I growled and told them to leave it alone and now I have hidden the rest.
That was with about 1/4 of a cup of sweetener, I will try again without sweetener next time because I found it very sweet. -
I am going to try making this today. Ice cream is one of my biggest vices. I might start saving the containers the woolworths cream cheese comes in to make individual serves. Or maybe do some in the paddle pop molds? Mmmmm.
