-1 large tin of crushed tomatoes or bag of tomatoes chopped roughly
-4 lean chicken thighs or 2 chicken breasts halved and pounded with mallet till flat
- 1 bag of baby english spinach
- small container of light ricotta cheese
- 2 cloves garlic
- 1 small brown onion sliced
- 1 tsp chilli flakes or dash cayenne pepper
- salt and pepper to taste
Roughly chop raw spinach and mix with tub of ricotta cheese, set aside
saute onion and garlic in a deep frypan, add tomatoes and simmer on low.
after using a mallet to flatten chicken, put 2 or 3 tablespoons of spinach and ricotta onto the chicken and roll the chicken. hold together with toothpick.
Once all the chicken is rolled, place into the tomato sauce and cook, turning occassionally. Add chilli/cayenne, salt and pepper.If cooking with chicken breast, you may need less time to cook as you dont want the breast to dry out.
I usually serve this with broccoli and cauliflower mash.
