    • spicy chicken stew with peanuts and ginger

      tried this really yummy dish today and need to share....

      what you need:

      2 pounds chicken legs
      3 Tbsp vegetable oil (coconut or grapeseed)
      2 onion (sliced)
      thump-sized piece of ginger (finely chopped)
      8 garlic cloves (roughly chopped)
      can of diced tomatoes
      3/4 liter chicken or veggie stock
      2 cups chunky peanut butter
      1 Tbsp ground coriander
      1 teaspoon cayenne
      Salt and black pepper


      salt and pepper chicken and fry in oil till crusty (may need to do it in batches). remove from pan, sautee onion, garlic and ginger in remaining fat. return chicken to pan, add stock, tomatoes, peanut butter, coriander and cayenne. bring to boil then reduce to simmer and cook untill chicken is fall-off-the-bone tender (1-1.5 hrs)

      i wasn't convinced when i started cooking, but the result... wow! and so easy. pumpkin works well as a side, or broccoli.
