    • LC Pecan Butter Cookies

      so simple, so fast, so healthy, so yummy :)


      1 cup chopped pecans
      1/2 cup unsalted butter at room temperature (i use ghee instead of butter in sweet stuffs)
      1/3 cup xylitol or sweetner equivalent
      1 teaspoon vanilla extract
      pinch of salt
      1 cup almond meal


      preheat oven to 180 C. roughly chop pecans and toast in oven (about 5 minutes)

      cream butter for about a minute with an electric mixer, add sweetner and cream about 1 minute more. add in vanilla, salt, and almond meal, mix just until combined, then fold in pecans.

      separate dough into 12 pieces and shape into balls. roll in more sweetner if you like it sweet. place on a baking sheet and gently flatten with the bottom of a glass.

      bake until golden brown, about 15 minutes.
