    • Spanish meatloaf

      Hi everyone. I adapted this recipe from a New Idea recipe yesterday and it was delicious.

      1 kg of pork mince
      1 roasted and peeled capsicum chopped
      1 onion, chopped and sauteed in olive oil
      1 clove garlic, sauteed with the onion
      1 whole chorizo sausage, sliced thinly and sauteed with onion and garlic
      2/3 cup breadcrumbs (I used the crumbs from a couple of slices of Empower bread)
      1 egg lightly beaten
      1 tbspn smoked paprika
      1/2 teaspoon powdered chilli
      Handful of chopped parsley
      2 tbspn tomato chutney
      5 stuffed green olives
      Slices of prosciutto

      Mix all ingredients together (except for olives and prosciutto). Drape prosciutto over a bread tin, press mince mix into tin over the prosciutto. Press the 5 olives into the mince in a line down the middle until they are covered by the mince (hiding inside). Wrap the ends of the prosciutto over the top and bake in 200 degree oven for about an hour. Slice into about 2 cm slices and serve with salad - yum!

      I haven't worked out the carbs in this but it must be pretty low.
