Made this today and it was YUMMY so thought I'd share.
It came about by mistake. I made the cookies, but they were a little dry and bland for my taste. I had combined some ideas from various recipes so was kind of testing. Next time I'll play around with the quantities and maybe add some more flavours, but that's for another day... I had also decided to make myself a berry shake, but didn't have quite as much coconut milk as I thought....next thing, I had ice cream!
Anyway, here goes: (all amounts are very approximate as I was not really measuring, just guessing)
Berry Ice Cream on Peanut Butter Cookie:
Put about a cup of frozen berries in a blender/processor, blend until finely chopped. Add about half a cup of cold coconut cream and blend until it has the consistency of soft serve ice cream. You can use it now or put in freezer to firm up (stir well when you take it out to break up any ice crystals)
Peanut butter Cookies:
about half to two-thirds cup of natural peanut butter
1 egg
Sweetener - couple of tablespoons or to taste.
Mix with electric mixer until creamy. Line a baking tray with baking paper, drop spoonfuls of mix on to paper and press down with a damp fork.
Bake at 180 for about 10 mins. Cool
Put a generous spoonful of the ice cream on a cookie, grate some sugar-free chocolate over the top.
