    • Calli's Mixed Up Mexican

      2 capsicums (one red one green)
      1 stick celery
      Cup of mushrooms
      500gs of mince
      2 heaps teaspoons of paprika (sweet/smoked preferably)
      1 heaped teaspoon of cumin
      2 heaped teaspoons italian herbs
      1 normal teaspoon salt
      1/2 teaspoon stockpowder
      1 cup of water.

      Chop vegies into tiny cubes. Fry in a tablespoon or two of bacon fat until half cooked, and then push to the side of the frying pan, and brown the beef. (In two batches if you need.)

      Mix the vegies and beef and then push to the side while you dump in the herbs and spices. Toast them for a few seconds until you can smell them warming up and then mix it all in together. Add one cup of water and simmer down until it's as dry as you like it.

      Serve in lettuce cups with toppings. We had cheese, yoghurt (or sour cream), tomato, avocado, and lime wedges.
