kinda.. recipe as follows.. this is my own recipe guys.. Ive not stolen it from anyone.
Ok.. so in my bread mixer.. I popped it all in according my my machines instructions.. ie: yeast on the very bottom of machines, liquids on top
14gms Coconut flour 9.1
130 grams of Wheat gluten 18.6
50grms of Besan Flour 23.2
25 grms ground flax 8.6
30 grms kamut Flour 21
25grams Almond meal 1.2
1tspn mixed spice .5
1tspn Cinnamon 2
½ tspn ground ginger 1
4 splenda sachets 0
¼ tspn Vanillan sugar 1
25 grams of mixed dried fruit (optional and will add about 35grms carbs to the final mix)
280 ml water
40grms of melted butter .2
I mixed it in the machine for 30 minutes only, pulled it out, divided it into 8 pieces on a floured board and popped it into a loaf or baking dish type of container, then put it somewhere warm (I’ve used my car for this but currently use my greenhouse) for a couple of hours to do its thing.
Carbs per without fruit
6 buns 14.4
8 buns 10.8
10 buns 8.7
12 small buns 7.2
the counts are approximate but I think they are pretty close.
I did not put a glaze on top, not convinced they needed it.
Im still experimenting with them, using coconut flour and taking the kamut out saves a few carbs and adds loads of fibre.. will keep you posted.
Ive just eaten one of them.. by golly they are moorish
Picture link worked fine.
I'm not sure what some of those ingredients are, though
What are Besan and Kamut Flours?
Is Wheat Gluten the same as Gluten Flour?
They do look very good
Besan flour is gram flour or chickpea flour
kamut is an ancient grain, not particulary low carb but you only use a bit of it. you could substitute it with oat bran or rye flour, or even wheat flour if you wanted.
Wheat gluten and gluten flour are the same thing.
Now that ive eaten 2 of them (im feeling like a glutton) I think I would still like a bit more sweetness and a lot more spice but i do love cinnamon and like it when it packs a punch
glad it wasnt just me.. i thought POH was pinterest friendly..
just put some mocha hot cross buns in the greenhouse ro rise, this time i didnt use any kamut, doubled the coconut flour, put in some dark chocolate bits and a bit of coffee and some extra sweetner.. they smell delicious
ok.. I might drop them an email..
for the record.. the mocha HCB are devine, I made them smaller.. got 14 of them, im glad cause they are way better than the first lot..
All this talking about various HCB has me drooling about them. I like the traditional with lots of fruit & spices - yum.
They sound fantastic, nice job
