Get your hands on Tagatose!

Tagatose is my new favourite low carb sweetener that I am currently experimenting with, tastes like sugar with no cooling effect and browns like sugar.

I came across tagatose last year when I was looking for a low carb sweetener that didn't have the cooling effect that the sweeteners I usually do. I have been very impressed with its taste, though it's not perfect when it comes to baking due to its maliard reaction - which means, it may brown too quickly in some recipes when baked. So be careful when baking. I've had terrible results with pavlova as well as some biscuits that used a high temperature but the baked cheesecake and muffins I made with tagatose worked really well.

Taste wise tagatose is really good, it tastes just like sugar but a little bit less sweet which is good for me as I find sugar too sweet these days. I have made brittle and caramel syrup with great success, tagatose works really well for this.

There is one more downside and that is it's popularity, Iherb are one of the few people that stock it and for a good price - but it goes out of stock quickly, so you may find you have to click on Notify Me so that Iherb notifies you when it comes in and then order some as soon as you see the email before it goes out of stock again. UPDATE: Unfortunately, the manufacturer that Nunaturals were using are no longer producing Tagatose *sigh* so in the mean time we're really just left with erythritol or Now Foods, Erythritol, Natural Sweetener 2.5 lbs (1134 g) and stevia until someone pulls their finger out and starts producing it again.
